Salad Delight
Introduction
Late Shri. B. S. Bapoojee was a popular socialite in Coimbatore. Udayashree and Bapoojee were known to be health-conscious people. They had been making their own salad dinner on a regular basis. Smt. Udayashree was a keen social worker and her services had provided succor to several people suffering from cancer. The couple was blessed with two off-springs Shri. Sandeep and Smt. Smita, leading their own successful professional lives.
Total preparation time: 15 – 20 minutes.
Serves – 4 to 6 portions.
Ingredients
- Carrot – 60 grams
- Cucumber – 60 grams
- Cabbage – 61 grams
- Pineapple – 50 grams
- Deseeded Tomato – 40 grams
- Capsicum (Red, Green, and Yellow) – 60 grams
- Sprouted Moong Gram – 40 grams
- Apple – 50 grams
- Pomegranates – 50 grams
- Walnuts – 30 grams
- Raisins – 30 grams
- Spring onions – 15 grams
- Lettuce – 1 leaf
- Dressing
- Balsamic Vinegar – 1 tsp.
- Honey – ½ tsp.
- Mustard paste – ¼ tsp.
- Olive oil – ½ tsp.
- Salt and pepper – to taste
Procedure
- Toss all the cut vegetables in a large bowl and add all the other ingredients into it.
- Pour the dressing and toss well.
- Refrigerate before serving.
