Vegetable Stew


This ‘Vegetable Stew' is indigenous to the household of Mr. Shyamkumar and Sangeetha. The family friend of Mr. Shyam Kumar and the renowned singer, Mr. Unni Krishnan along with his wife, Mrs. Priya Unni Krishnam, savour this vegetable stew on a regular basis at their home in Coimbatore. 


1. Carrot – 1 no. 

2. Beans – 6 nos. 

3. Small Potato – 1 no. 

4. Green Peas – 1 handful 

5. Coconut Milk – 200 ml. 

6. Salt and White Pepper – as required  

Ingredients to Prepare White Sauce 

1. Butter – 1 tbsp 

2. Maida – 1 tbsp 

3. Milk – ½ a cup 

4. Ingredients required for Seasoning 

5. Cloves – 3 nos. 

6. Cinnamon – ½ a piece 

7. Coconut Oil – 2 tbsp 

8. Bay leaves – ½ a piece 


1. Heat oil in a deep pan and add the ingredients for seasoning. 

2. Mix in the green chillies and sauté. 

3. Chop and add all the carrots, beans, potato, add the green peas, and sufficient water for the vegetables to cook. 

4,. Add salt and cover the pan with a lid. 

5. Transfer the white sauce to the pan after the vegetables are cooked. Stir well. 

6. Pour the coconut milk and keep stirring simultaneously. 

7. Sprinkle the pepper, stir, and serve hot with Aapam or Idiyaapam. 

Procedure for the preparation of white sauce 

1. Heat a small pan and add the butter. 

2. Add maida before the melting of butter and sauté for a minute or less than that. 

3. Add milk immediately and keep stirring. Leave it to boil in reduced heat. 

4. The sauce is ready to use once it thickens. 

5. Use this white sauce during the preparation of the stew.
